Deliciously Simple Lemon Cake Recipe
Discover how to make a delicious lemon cake that's perfect for beginner bakers. This moist and flavorful cake features a delightful combination of butter and olive oil, ensuring a tender texture.

This simple lemon cake is a fantastic illustration that even beginner bakers can create a delightful dessert. The cake is soft, buttery, and moist, bursting with lemon flavor. The only challenge? You won’t want to stop at just one slice!
The secret to this lemon cake lies in the unique combination of butter and olive oil. While butter provides the classic rich flavor, the oil ensures that the cake remains soft and moist, allowing it to stay fresh for several days. A light dusting of powdered sugar on top is all the decoration it needs—minimal effort for maximum taste!
Achieving the Perfect Lemon Cake with Few Ingredients
The ingredient list for this lemon cake recipe is quite manageable, yet it yields a cake with abundant flavor and texture.
- Butter + Oil: Butter adds richness while oil keeps the cake moist.
- Raw Cane Sugar: This natural sugar introduces subtle caramel notes and warm flavors, although you can also use regular granulated sugar.
- Grated Lemon Zest and Lemon Juice: These ingredients guarantee a vibrant lemon flavor.
- Eggs: They provide structure and a light consistency to the cake.
- Flour: You can choose between wheat flour or spelt flour.
- Baking Powder
- Buttermilk: My secret ingredient for a tender and juicy cake.
Important: When using freshly grated lemon zest, opt for unwaxed or organic lemons!
Baking the Lemon Cake Made Easy
Using few ingredients also means that baking is straightforward. Here’s a step-by-step guide to ensure your lemon cake turns out perfectly every time:
Step 1: Cream the Butter Mixture
Begin by creaming the butter with oil, sugar, and lemon zest until the mixture is light and fluffy. This forms the base for your tender lemon cake.

Step 2: Add the Eggs
Incorporate the eggs one at a time, mixing well after each addition until everything is thoroughly combined.
Step 3: Gradually Add Wet and Dry Ingredients
First, combine the buttermilk and lemon juice. Then, gradually add this mixture along with the dry ingredients into the egg mixture.

Step 4: Mix Gently
To keep the crumb light, be careful not to overmix. Stir just until the ingredients are combined.
Step 5: Bake
Pour the batter into the prepared pan and bake until the cake is golden brown and has risen. Allow it to cool completely before dusting with powdered sugar.

Tips and Tricks for the Best Lemon Cake
A few key details can elevate a regular lemon cake to something exceptional. Here are my top tips:
- Freshly Squeezed Lemon Juice: This truly makes a difference in flavor. Bottled lemon juice often tastes flat and overly intense. Fresh juice brings brightness and natural sweetness.
- Grated Lemon Zest: Don’t skip this! The oils in the zest contribute to the perfect lemon aroma.
- Room Temperature Ingredients: Use butter, eggs, and buttermilk that are at room temperature. They blend beautifully and create a uniform, tender consistency.
- Avoid Overmixing the Batter: Once the flour is added, mix gently and only until just combined. Overmixing can lead to a dense cake instead of a light and fluffy one.
- Cool the Cake: If you sprinkle powdered sugar on a warm cake, it will absorb the sugar, and you won’t see the lovely white dusting. Let the cake cool completely to maintain that signature patisserie look.

Essential Kitchen Tools
You don’t need special equipment for this lemon cake, but having the right tools can make the process smoother. Here are my recommendations:
- Springform Pan: This allows for even baking and easy release of the cake.
- Zester: A zester makes it easy to grate the lemon peel without the bitter white pith.
- Juicer: I prefer a handheld juicer, which is easy to use and clean.
- Cooling Rack: Use this to cool the cake evenly and retain its texture.

Reasons to Fall in Love with This Simple Lemon Cake

- 140 g Unsalted Butter, at room temperature
- 1 tbsp Olive Oil or neutral oil
- 150 g Raw Cane Sugar
- 1 tbsp Lemon Zest, finely grated from 1 organic lemon
- 3 Large Eggs, at room temperature
- 230 g Wheat Flour or Spelt Flour (Type 630)
- 1 tbsp Baking Powder (phosphate-free)
- A pinch of Sea Salt
- 125 ml Buttermilk, at room temperature
- 60 ml Freshly Squeezed Lemon Juice
- Powdered Sugar
- Preheat the oven to 175°C (347°F) and grease a springform pan (Ø 24 cm) and line the bottom with parchment paper.
- Sift flour, baking powder, and salt into a small bowl.
- Using a hand mixer or stand mixer with a paddle attachment, beat the butter, oil, sugar, and lemon zest until light and fluffy (about 4-6 minutes).
- Add the eggs one at a time, mixing well after each addition until fully incorporated.
- In a measuring cup or small bowl, mix the buttermilk and lemon juice.
- Gently fold a third of the flour mixture into the batter, then stir in half of the buttermilk mixture. Repeat with another third of the flour mixture, followed by the remaining buttermilk mixture, and finish with the last third of the flour mixture. Mix just until combined. Do not overmix!
- Pour the batter into the prepared pan and smooth the surface.
- Bake until the cake is golden brown and a toothpick inserted in the center comes out clean (about 40 minutes).
- Allow the cake to cool in the pan for a few minutes before removing the springform. Transfer the cake to a rack to cool completely.
- Dust with powdered sugar before serving. Enjoy!

- The Sugar: Raw cane sugar has a hint of caramel flavor. Regular white sugar works too. The lemon cake should be sweet but not overly so to let the delicious lemon flavor shine. If you prefer it sweeter, you can add up to 50 g more sugar.
- Butter & Oil: This recipe combines both for the perfect consistency. Butter enhances flavor, while oil keeps the cake moist and tender. You can also substitute an extra tablespoon of butter instead of oil.
- The Springform: I used a pan with Ø 24 cm. If you have a 20 cm pan, the cake will be taller and will require a longer baking time. Check for doneness after 50 minutes and plan for 55 to 65 minutes of baking. If the top browns too quickly, loosely cover it with foil and continue baking until the toothpick comes out clean.
- Storage: The lemon cake can be kept covered at room temperature for up to 2 days and in the refrigerator for up to 5 days. To regain its best texture, bring it to room temperature before serving.
